Meet Joe, founder and Pastaio(Pasta Maker) of Project Pasta. At the age of 33, Joe has spent 15 years in the restaurant industry. 3 Years as a Barista, and a dozen years Bartending. 7 of those years were spent on the Las Vegas strip in an assortment of fine dining, and craft cocktail oriented concepts, and the latter 5 out here in Phoenix, AZ. Although Joe has never worked in a restaurant kitchen, he has been honing his flavor skill behind the bar as well as at home where he cooks daily. His journey with pasta got much more serious a couple years ago, utilizing friends and family as guinea pigs for what eventually became Project Pasta. Joe has a dream of becoming the best pasta maker in Arizona. You'll find his style heavily gravitates towards Italian, however on occasion you'll find some Asian flair. Likely due the year he spent working in a ramen shop. Either way, with each bite of Joe's noods, you are a part of Joe's journey to the top of the pasta world!
